Grass-fed Beef and a Better Burger!

While we recognize the many benefits of a plant-based diet, we also recognize that no one diet is perfect for everyone.  No matter what kind of diet you choose to follow, emphasis should always be placed on the quality of your food.  We always recommend that you buy organic fruits and vegetables and preferably buy them from a local source, or even better, pick them from your own garden.  The same rules apply to beef, poultry, seafood and other forms of animal protein.  There are other guidelines that should be followed for each of those, but as today’s recipe is for a burger, let’s focus on meat.  While organic is superior to conventional supermarket beef, grass-fed organic beef is superior to grain-fed organic.  Among other nutritional benefits, the Omega 6 to Omega 3 ratio is much more balanced in grass-fed beef.  You can learn more about its advantages here. 

Now, we all have a favorite Dad in our life and chances are he enjoys a good burger.  What better way to say “thank you” with a dressed up and healthier take on the classic burger? Wrap in romaine lettuce or serve over a salad for a healthier alternative to traditional buns.

Grilled Pineapple Burgers with Avocado Cream

1lb Grass Fed Ground Beef
1 pineapple, cored and sliced
1 yellow onion, sliced thin
1 tablespoon chipotle chili powder
2 garlic cloves, minced
½ teaspoon onion powder
½ teaspoon coarse sea salt
½ teaspoon black pepper
For the avocado cream:
2 avocados
juice of 1 lime
juice of ½ lemon
1 tablespoon hot sauce (your favorite will do)
1 teaspoon chipotle chili powder
1 teaspoon olive oil
pinch of salt

-Preheat your grill, or if you prefer, a cast iron or other skillet.
-Core and slice your pineapple.  Never done this before? Follow these instructions.
-Peel and slice your onion.
-Place meat in a bowl, add seasonings and mix thoroughly.  Make 4 burger patties and flatten them out a bit.
-Place onions, burgers, and pineapple on the grill at the same time. Try not to place pineapple over direct flame because it can burn pretty easily due to the sugar content.
-Flip when grill marks become present, after about 5 minutes and cook about the same amount of time on the other side of until burgers are cooked to preference and pineapple is a bit charred and soft.

While the ingredients are on the grill, make your avocado cream!
-Cut avocados in half, remove the seed, then scoop out the insides and place in your food processor.
-Turn food processor on and let the avocado begin to break down. After about a minute, while your food processor is still running, add the rest of the ingredients for the avocado cream and keep pureeing until smooth: about 1-2 minutes.Place a burger down, top it with pineapple, then a grilled onion, and then a dollop of avocado cream on top.  Enjoy!
